Yummy Fish Fillet and Vegetable Stew



Serves 4



Ingredients:
-2 medium baby marrow,sliced
-2 medium carrots,diced
-4 medium potatoes,quatered
-1 small head brocoli,broken into florets
-2 tablespoons olive oil
-Extra olive oil for vegetable
-500g firm,white fish fillets cut into large pieces
-1 onion,sliced
-1/2 red pepper cut into strips
-60g butter
-125ml white wine
-125g dairy sour cream
-ground black pepper
-salt



Method
1)Boil,steam or microwave baby marrow,carrots and
broccol separately until just tender.Drain and refresh
under cold water.Remove skin and boil potatoes making
sure they cook well.



2)Heat oil in a large frying pan and cook fish over
medium heat for 1 minute each side. remove fish from
pan and set aside.



3)Add butter,wine,sour cream and black pepper to taste
in pan,bring to the boil and cook stirring,for four to
five minutes or until mixture is reduced to one
third.Strain sauce and return to clean pan.



4)Stir potatoes,baby marrow,carrots,broccoli,fish and
onion mixture into sauce and cook,stirring gently,for
3-4 minutes or until fish is cooked.



Serve it the Kenyan style with ugali.It can
alternatively be served with rice,chapati or
arrowroots.
